Some use the "heart", others call them places of "buon ritorno". Without any doubt there is a category of restaurants that cannot be judged by normal standards, restaurants which hold themselves to a rigorous evaluation of merit and which excel in the quality of their service. It has been demonstrated, in fact, that, after other obvious factors, the quality of service is the principal component in securing customer loyalty and is much more effective than the delicious cuisine or the chef's technical leaps.
